Karen's Quick Tomato Sauce

This is an easy recipe for making homemade tomato sauce. it is delicious on homemade pizza, any pasta or even chicken parmesan. 


What you’ll need:

8-10 Plum Tomatoes (medium sized)

1-2 Tablespoons of Olive Oil

1/4 Teaspoon Italian Seasoning

1 Teaspoon Garlic Powder

1/2 Teaspoon Dried Basil

1/4 Teaspoon Onion Powder

Pinch Salt

Pinch Sugar

Pepper to taste


Bring a medium saucepan of water to a boil (do not salt water).


Score the plum tomatoes down the sides of each tomato (about 4 slices making sure not to cut too deep) and place them in the boiling water.


Cook for about 2 minutes and remove from the water into a colander or bowl to cool.  The skins should be pulling away from the pulp of the tomato.  


While tomatoes are cooling, in the saucepan add all remaining ingredients (except sugar) and sauté on low to medium heat. You want to warm-up the seasoning to release its flavors into the oil.


Carefully remove the skins of the tomatoes and discard. Place skinned tomatoes into saucepan and mash with a fork or back of spoon. You can also use an old fashioned potato masher if you have one.


Cook on low for about 20 minutes - stirring every couple of minutes.  Taste your sauce - if it is too acidic, add a pinch of sugar.   The sauce will reduce as it cooks.
