This is a delicious and refreshing salad in the summer, but it's so delicious and festive you'll want to serve it all year long.
What you’ll need:
Your favorite salad mix (I use romaine, iceburg and red cabbage). I have also used butter lettuce and purple-leafed.
1 large can of mandarin orange slices (drained)
1 small (3 ounce) of goat cheese
Pecans
Cherry Tomatoes
Croutons
Balsamic Dressing
Wash all lettuce and pat dry. Place lettuce in large salad bowl.
Drain mandarin oranges and place in salad bowl on top of the lettuce - I start around inside outer rim placing them so there is a pattern. I do not mix them in until I am serving - this way when you bring the bowl to the table it looks very pretty. Get creative with your design.
Crumble the goat cheese on top of the salad. Again, do not mix in until ready to serve.
Toast pecans in a non-stick pan for about 3-4 minutes (you can also put in 400 degree pre-heated oven for 5 minutes). Make sure to watch the pecans so they do not burn.
Chop the pecans and sprinkle over the top of the salad.
Cut cherry tomatoes in half and place on top of salad - again I do not mix in until ready to serve.
Dress with Balsamic Dressing before serving. Add croutons.
Optional add some dried cranberries - adds another pop of color especially for the holidays.
